Update

Brian's surgery last Thursday went great. The Doctor did a procedure called micro-fracture surgery to the knee cap and removed allot of damage cartilage. He has been doing his physical therapy and is walking around now without his crutches. Things are looking good! Below are a link to pictures .

Other than that things are just moving right along. The kids are wrapping up SAT testing at school. Macy has started play practice for the school play and working on her school scrapbook for SGA. Logan has been having play practice and was told his solo will be the song Love Shack. We still don't know when the actual are plays yet.

Hudson and Collin have been fine and both recovered from the virus they had . No more episode with Hudson.

Here are 2 recent recipes I made that turned out really well. Both from Prevention magazine. I guess it might mean I am getting old but I really found the 2 issues I had interesting and helpful. Both soups super easy and contain 4 basic ingredients.

Beef Vegetable
1 package beef stir fry strips
4 cups Chicken Broth
1 bag Simply Potatoes cubed with Onions
1 bag Birds Eye frozen soup vegetables

Heat 2 tablespoons oil in bottom of soup pot. Add beef strips and cover with 1 tablespoon flour and brown meat. Once browned add Chicken Broth and 2 cups water, scrap down bottom of pot and boil. Add veggies and potatoes, salt ,pepper and a few dashes of Worcestershire sauce . Very yummy!
Spinach and Cheese Tortellini Soup
4 cups Chicken broth
1 9oz package of refrigerated cheese filled tortellinis
3 cups fresh spinach
Fresh Parmesan cheese

Boil chicken broth and 1 cup water. Once boiling add tortellinis and boil 9 minutes. Once done add spinach and stir as it wilts. Salt and pepper to taste. Add fresh cheese to top before serving. VERY easy and GOOD!
